When I was in college, this was one of my favorite things that they served at the dining hall. Thinking about dinner tonight, I couldn’t come up with anything that sounded good to me. I told Ross he could pick whatever he wanted. When I got home, he announced that we were having breakfast for dinner. It sounded soooooo good, and I was excited.
We like to make breakfast sandwiches, so that is what we did tonight. I sauteed 1/2 of a green pepper, 1/2 of an onion, and about 4 oz of fresh mushrooms, chopped. In a bowl, I scrambled 5 eggs with a splash of milk and some salt and pepper. The eggs were added to the veggies and scrambled up. I usually then split them into 4 sections and sprinkle cheddar cheese on top, then allow it to melt. Splitting it into sections now just makes it easier to put them on the sandwiches later.
While all of that is going on, we heat up some turkey sausage patties. We use Jimmy Dean and they are very good.
Under the broiler, heat up some English muffins until golden brown.
Top the English mushrooms with a section of the eggs, then top with a sausage patty. If you’re us, you’ll smother it in ketchup, but I realize that many people mistakenly think ketchup on eggs is gross. They’re wrong. It’s oh so good.
We had these with some Simply Potatoes Southwest hash browns.
For dessert, we just had some Edy’s (buy 1 get 1 free at Food Lion!) Vanilla Ice Cream Sandwich Ice Cream. Aaaaahhhhhh. Such a good night.
