If you read this blog regularly, you probably can tell that I love ground turkey, and tend to use it on a much more regular basis than ground beef. It just doesn’t taste that different to me, and it is better for you so I go with it. There are too many “healthy” things that I don’t like and don’t eat, so I have to take advantage of the ones that I don’t mind!
Tonight’s dinner came from the Easy Everyday Favorites cookbook put out by allrecipes.com. It is a collection of a bunch of their 5 star recipes. There is a ton of good stuff in here. The recipe for Mexcian Turkey Burgers is delicious. I don’t know why, but it tastes different than just making soft tacos with ground turkey. The basic idea is mixing ground turkey, sauteed peppers and onions, taco seasoning mix, a little salsa with corn, forming it into patties and rolling them in breadcrumbs before baking them. You serve them in tortillas with shredded lettuce, sour cream, and if you’re us, a little cheese.
These were super delicious, healthy, quick and easy. They were an all around winner for us!
