Calico Beans June 18, 2008

This is another recipe that we rotate often. Ross made it for dinner last night.  I didn’t get home until very late and he had it warm in the oven waiting for me!  It is super tasty and easy to make.  I love the combination of flavors in this meal… and textures.  That may sound odd, but I am a weird texture person.  Often times I crave a food not for the actual flavor, but for the texture.  What can I say… I’m weird.

We always eat this as a main dish with some veggies on the side, but you could serve it as a side dish too.

Calico Beans

1 can pork and beans

1 can kidney beans, drained

1 can butter beans, drained

1 lb ground beef (we usually use ground turkey)

1 med onion, chopped

1/2 c ketchup

1/4 c brown sugar

1 T vinegar

Brown beef/turkey and onion.  Mix together ketchup, vinegar, and brown sugar.  Combine all ingredients in casserole dish and bake uncovered at 350 for 45 minutes.

Tonight we’re having grilled Italian turkey sausage with peppers and onions along with The Stamm’s chili fries… haven’t tasted them yet, but they sure do smell good!
