We went over to my sister’s last night for dinner. The original plan was to go to Mellow Mushroom. It has always been a summer favorite for Kara and I… the pizza is great and the margaritas are fabulous. Ross has come to love it there as well. Only thing is… for some reason… the pizza and marg’s only taste great when you eat them outside. They are good when eaten inside but not great. So, when it was going to still be 101 degrees at 6 pm, I couldn’t bring myself to want to eat dinner outside. At the last minute we decided to just meet at Kara’s for a dinner of salads. Kara made a nice fruit salad and a great pasta salad. I will have to get the recipe from her. It had a creamy pesto dressing, asparagus, artichokes, pine nuts and lots of other good stuff. Below is the recipe for my contribution to the dinner. It is super easy and always a hit when I take it somewhere.
Easy Corn and Black Bean Salad
2 cans Mexi-corn, drained and rinsed
2 cans black beans, drained and rinsed
1/2 cup roasted red peppers, chopped
1 tsp cumin
1/2 cup red wine vinaigrette salad dressing
Combine all ingredients. Add extra dressing if needed or desired. Serve cold.
