Hot Chicken Salad May 19, 2008

Ross made dinner tonight, and it was delicious!  This recipe came from the cookbook Our Town, Act II which was put together by The Woman’s Club of Broadway.  This cookbook was one of the first gifts given to me by Ross’ parents.  It has a ton of great recipes in it.  Let me know if you are interested in a copy and I could probably direct you to the right person!

 

2 c. chopped cooked chicken (Ross bought a Rotisserie chicken at Lowes and used the meat from that)

1 to 2 c. chopped celery

1 c. slivered almonds

1 can cream of chicken soup

1 c. mayonnaise

1 tsp. salt

1/2 tsp. pepper

1 T. grated onion

2 tsp. lemon juice

3 hard boiled eggs, chopped

1 can Chinese noodles

 

Mix all ingredients.  Top with Chinese noodles.  Bake at 350 for 45 minutes.
