Warm Mushroom Spread May 6, 2008

This is one of my favorite appetizers.  It is just different enough to be unique without being weird.  It tastes a little bit like a stroganoff, but is vegetarian.

 

3 T butter

1 lb mushrooms, sliced

1 small onion, chopped

1 1/2 T flour

1 c. sour cream

1/2 t lemon juice

pinch of salt and pepper

1/3 c. parmesan cheese

warm bread or crackers to serve (wheat thins work well)

 

Preheat oven to 375.  Melt butter in skillet over medium heat.  Stir in mushrooms and onion, cook until tender.  Sprinkle with flour.  Reduce heat to low and continue cooking 5 minutes.  Mix in sour cream and lemon juice, season with salt and pepper.  Transfer to small casserole dish (a pie plate also works well).  Top with parmesan cheese.  Bake 15 minutes, until bubbly.
