Life is getting hectic around here, so our dinners lately have been a little random. Ross made dinner tonight, we had steak on the grill, green beans and mashed potatoes. Ross makes awesome mashed potatoes, adding things like sour cream and cream cheese and other treats depending on his mood and what’s in the pantry. We have a pork tenderloin in the fridge that I can’t wait to make. I found a recipe that sounds amazing (and we can use the new Dutch oven!) so we will make that as soon as there is a night with enough time for it.
Friday night we wanted something quick and easy so Ross bought a frozen meal. That is not something that we do very often, so it is always interesting to try them and see what they’re like. He bought a TGI Friday’s pasta carbonara. It was pretty good, but not really enough for our big appetites. We also had a Dole salad which was awesome, it had sunflower seeds, croutons, good cheeses and tomato balsamic vinaigrette dressing. I could have eaten the whole bag!
On an unrealted note, Luna had another vet appointment on Saturday. On July 2 she weighed 16 pounds. Sat (Aug. 2) she weight 29 pounds!!! She almost doubled her weight in a month. And… she is about 6 weeks YOUNGER than we thought. Which means she is not even 4 months old and weighs almost 30 pounds. Lovely. She was only supposed to be 45-50 pounds total! Luckily, she has stolen our hearts enough that we’ll keep her no matter how much of a giant she is going to be.
Kara and I went to the Taylor Swift/Rascal Flatts concert on Saturday night. We had a great time and had fun listening to good music. We stopped by Chili’s on the way home and got some take out. It’s been awhile since I’ve eaten quesadillas at midnight, but they tasted awesome!
Enough randomness for tonight. Hopefully life will be calm enough this week to make some yummy stuff to share. Have a good week!
